Carré d’Agneau dans sa croute dorée aux cepes served with Château Lafite Rothschild 1949 en Marie-Jeane at The Waterside Inn at Bray December 1994.

If you could make a vintage anywhere, where would you go?

Auntsfield Estate – Marlborough – New Zealand.

Your proudest moment?

It would have to be moments – the arrival of my three children – Milly , Nick and Emma.

What would your last meal be?

Terrine de foie mi–cuite. Filet Steak Béarnaise sauce. Stilton –washed down with Château de Beaucastel 1989.

What is your desert island wine?

A magnum of Gosset Rosé Champagne.

What would be your fantasy other job?

Landscape gardener.

Both.
